If you’re looking for an easy but incredibly flavorful salsa, look no further. This Guajillo Tomatillo Salsa is so easy to make and only requires 5 main ingredients! Don’t be intimidated by the dried peppers, I promise they are easy to work with and you can use them for various dishes. If you don’t have them readily available at a grocery store then you can easily order some online. Check out Amazon or this online store for a variety of dried peppers. I have seen them at our local Wal-Mart as well so might be worth checking there also. This salsa reminds me of the hot salsa from Chipotle, (my fave), and you will seriously want it on ALL the things!
The first step to make this Guajillo Tomatillo Salsa is to deseed and devein the peppers. This can easily be done by popping off the stem and emptying out the seeds through that whole then cutting it in half lengthwise and pulling out the veins, (be sure to use some gloves). Alternately you can leave everything in all the peppers or some of the peppers for a little more heat. If you like a good amount of heat I would recommend you add some dried chile de arbol peppers or add in a serrano. Next you will add the peppers and the rest of the ingredients, minus the cumin and salt, to a small pot and bring to a boil. This will cook the tomatillos, onion, and garlic and will soften the pepper. If you are adding a serrano or chile de arbol, do so at this time to cook or soften with everything else. You’ll blend everything together and , BOOM, you’ll have the yummiest salsa that will remind you of the delicious hot salsa from Chipotle. So flavorful, good amount of spice, and perfect to drizzle over all the things!
Guajillo Tomatillo Salsa
Ingredients
- 6 guajillo peppers
- 6 tomatillos
- ½ onion
- 3 garlic cloves
- ½ cup water
- ½ tsp cumin
- 1 tsp salt adjust to taste
- Chile de Arbol or Serrano pepper optional for additional heat
Instructions
- Deseed and devein as many guajillo peppers as you'd like. Keep in mind if you want more heat, keep more seeds and veins in the peppers. Do this by popping off the stems and emptying out the seeds through the hole. Then cut the pepper lengthwise and remove the veins and remaining seeds. I recommend wearing gloves or pouring a little oil onto your hands before and then ensuring GOOD hand washing after.
- Remove the husks off the tomatillos and wash. Place the prepared peppers, tomatillos, onion, garlic, and water in a pot and bring to a boil. If you want more heat your can add your serrano pepper or chile de arbol here.
- Once the vegetables and chiles are softened, add everything into the blender, including salt and cumin. Blend for a couple of minutes and adjust salt to taste.
