Sheet pan meals are always so easy and convenient, especially when your schedule is busy and need all the extra time you can get. This Sheet Pan Salmon Fajitas recipe is no different and also makes for a great meal prep ahead of time. It’s simple, easy, and delicious! I love to make it for the week and eat is as a bowl with brown rice, beans, a little sour cream, and salsa. It is also great for tacos or as a simple salad over some lettuce and extra veggies. The simple spice mix is made with only 5 spices and the actual fajitas are made with only 5 ingredients, including the spice mix. Talk about easy and flavorful!
Let’s talk about the spices you’ll need: garlic powder, onion powder, chili powder, cumin powder, and salt. That’s it, simple but delicious! You can certainly add or omit some spices and make it your own but use that as the base to get lots of flavor. Think about adding some cayenne for heat or chipotle powder for a little smokiness too. Endless possibilities to make it your own. Now on to the rest of the ingredients. I love to keep it simple and easy so I use a combination of bell peppers, onion, and jalapeno pepper along with the seasoned salmon. Were you waiting for more? Nope, that’s it! I was not lying when I said these Sheet Pan Salmon Fajitas are simple, and delicious.
The best thing is you can eat it as is with tortillas on the side or use it for other meals. Sometimes all you need is a little guac, sour cream, and some salsa on the side and maybe even some beans and rice. You can also use this to make tacos, taco/rice/grain bowls, or a big delicious salad. The leftovers heat up great and you can always make this for your lunches for the week. The salmon is also great cold if you want to just toss it on top of you salad ingredients along with the fajita veggies. You really can’t go wrong!
Sheet Pan Salmon Fajitas
Ingredients
Fajita Spice Mix
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tsp chili powder
- ½ tsp cumin powder
- ½ tsp salt
Sheet Pan Salmon Fajitas
- 1½ lb salmon
- 3 bell peppers sliced; I use a combo of red, yellow, and orange.
- 1 onion sliced
- 1-2 jalapeno sliced; use to taste or omit
- olive oil
Instructions
Fajita Spice Mix
- Combine all spice in a small bowl, set aside. Taste and salt more if desired to taste.
Sheet Pan Salmon Fajitas
- Preheat oven to 350°
- Pat dry salmon filet(s) with a paper towel. Drizzle olive oil onto salmon and rub in to coat it thoroughly. Sprinkle about 2/3 of fajita spice mix onto salmon. Set aside.
- Place bell peppers, onions, and jalapeno on sheet pan. Drizzle with olive oil and sprinkle remaining spice mix onto veggies. Toss to coat well.
- Place sheet pan in middle rack of oven and bake for 10 minutes. Remove sheet pan from oven.
- Move fajita veggies to make room for salmon and place salmon onto sheet pan. Place back into middle rack of oven and bake for an additional 10-12 minutes. Check the salmon at 10 minutes and if you like it more cooked, leave in for additional 2 minutes checking again for doneness.
